Dark Spirit Enterprise’s Steel Barrel Technology (SBT) and Everstill Spirits have been featured in the Australian Financial Review, with Maxim Donni taking a closer look at the technology challenging traditional conventions around whisky and dark spirit maturation.  The article explores how SBT uses real oak, controlled temperatures and pressure to develop depth and character in a fraction of the time associated with old-school barrel ageing... and puts the results to the test!  In a blind tasting at the AFR Life & Leisure office, Breaking Barrels, matured in around 30 days, was tasted against an eight-year-old Scotch, with most of the room preferring the 30-day spirit.  The feature also looks at the origins of Steel Barrel Technology, Everstill brands Breaking Barrels, Canesnap and Golden Hour, and DSE’s plans to scale the technology for the global spirits industry.
